Our approach to the perfect Croque

Classic croque monsieur recipe
Ingredients:
For the bechamel
- 1/2 cup of unsalted butter
- 1/2 cup of all purpose flour
- 2 cups of whole milk
- 2 cups of whole milk
- Pinch of kosher salt
- Pinch of fresh grounded black pepper
- 1/2 teaspoon of nutmeg
For the sandwich
- 6 thick slices of white sandwich bread
- 5 oz of good quality smoked ( for better flavor ) ham
- 7 oz of grated gruyere cheese
Instructions for the bechamel
- Melt the butter in a medium saucepan over medium heat.
- Whisk it with the flour
- Stirring for about 2 good minutes (until you have a little paste called roux.)
- Then gradually add the milk (Stir it again until the all texture is smooth)
- Cook until the sauce is thickened.
- Season with salt , black pepper and nutmeg.
- Turn off the heat, and set aside
Instructions for the sandwich
- Preheat the oven at 375 F (Use a silpat or parchment paper in your baking tray)
- Spread each slice of bread with the Bechamel (make sure that you have some sauce all the way to the edges)
- Put 4 slices of smoked ham on only 3 pieces of bread.
- Top all your 6 breads with your grated gruyere everywhere.
- Now straight in the oven with bechamel side up
- Bake at 375 F for about 7 to 8 minutes. Then 1 minute on broil , until the cheese on top is lightly golden brown.
- Make 3 sandwiches by placing the slices without ham on top of the other ones.
